Boston Chef, Ian Just, owner of Les Zygomates, served up his recipe for Chocolate Fondue for Valentine's Day.
Chocolate Fondue |
Ingredients
1 cup sugar
1 cup semi sweet chocolate
1 cup butter
2 TBLSP bittersweet chocolate
Zest of one orange
2 TBLSP flour
3 whole eggs
Directions
Melt chocolate & butter in double boiler, whisk until
incorporated. Heat sugar & eggs until warm. Remove skin of orange, dice
rind into fine cubes. Add chocolate/butter mixture to sugar & eggs. Mix
well. Add flour, zest of orange and whisk well. Butter terrine mold, pour into
terrine. Leave an inch at top of mold. Cover with foil.
Served in a Terrine – 12” x 3 1/2"
